It is certainly not easy to tame the palate to the strong, decisive and tasty taste of oil produced entirely from Coratina olives, but equally it would be a shame to give up the benefit of the extraordinary health characteristics of Coratina monocultivar oil. The very high concentration of polyphenols, very powerful antioxidants, in fact delays cellular aging and helps prevent the onset of tumors, atherosclerosis and other diseases; the higher level of oleic acid is also useful in preventing cardiovascular diseases, freeing the arteries from the so-called “bad cholesterol.”
