Yellow in color with green highlights, with a medium-delicate fruity fragrance in which hints of apple, artichoke and herbaceous scents are noticeable. The taste is very delicate and harmonious, at the antipodes with another extremely widespread southern cultivar such as Coratina, instead decidedly intense and with a very very strong and spicy flavor. Thanks to its characteristics related to its unmistakably pleasant, delicate and elegant fragrance and its equally subdued and gentle taste, it is an extra virgin olive oil particularly suitable for baby food, thus for weaning meals but also in fish preparations that do not risk being overpowered by the oil’s flavor but rather delicately enriched.
