Cisternino

The historic center and the culinary tradition

Cisternino is an ancient town that stands on a green hill of the eastern Murgia at 349 km above sea level.

It is a village rich in history, which has experienced the succession of different dominations, which have a left a clear mark on its architecture.
The town was destroyed by the Goths and then rebuilt by the Basilian monks, builders of the famous abbey in the heart of the town.
The charm that distinguishes the historic center, given by low houses, hidden courtyards, stairways, alleys and small arches, has meant that the town was awarded the Orange Flag by the Italian Touring Club.
Walking through the alleys of the town, you can breathe in the scent of meat; bombette, meatrolls, and spit-roasted chops.
In fact, Cisterninois the undisputed capital of the gastronomy of the Istria Valley because of the famous “fornelli.” These are butcher shops where you can ask to roast your freshly chosen meat at the counter and taste typical local meat specialties. These include “gnummeredde” made from lamb entrails.
